The Global Model X 8" Chef's Knife is an enhanced version of one of the best-selling Japanese chef's knives, designed to be the multipurpose workhorse of the kitchen. This knife offers the ultimate balance, making it perfect for a variety of tasks, such as mincing, cutting, chopping, slicing, and prep work. Its pinch grip provides unbelievable control, making it ideal for precise chopping.

Complementing the Chef's Knife, the Global Paring Knife is a versatile small knife that excels in hand peeling, precision cutting, slicing, and detail cuts. It's the perfect tool for deveining shrimp, removing seeds from chili peppers, and skinning or cutting small garnishes.

The Global 2 Piece Knife Set includes the Global Model X 8" Chef's Knife (GF-98) and the Global 3.5" Paring Knife (GS-38), providing you with the essential tools to handle most kitchen prep, cutting, slicing, and chopping tasks.

The newly designed Model X Chef's Knife features a wider and thicker blade (2" height and 4mm spine thickness at the edge heel) for enhanced versatility, improved balance, and heft. The longer, fuller handle on the chef's knife has been re-designed for better control and comfort, particularly when using a chef's pinch grip. The signature dimple pattern on the handle offers slip-resistance and the brand's unmistakable look.

The blades are crafted from the finest stainless steel, called Cromova 18 (Chromium, Molybdenum, and Vanadium), designed exclusively for Global. These blades are ice-tempered and hardened to Rockwell 56-58 degrees, allowing them to retain their razor-sharp edge for longer than any other steel.

Manufactured in Japan with a lifetime warranty, the Model X Chef's Knife has an 8" blade (13.25" overall) with a 2" blade height and 4mm spine thickness at the heel, weighing 9.2 oz. (262g). The Paring Knife has a 3.5" blade (7.6" overall) with a 3/4" blade height and 1.8mm spine thickness at the heel, weighing 2.2 oz. (63g).
